Making Tofu Stir Fry

The other day I decided to make a tofu stir fry. This tofu was organic and GMO free, and quite tasty since I seasoned it to taste. The stir fry consisted of firm tofu, onions, green bell peppers, and some romaine lettuce that was about to expire. Rather than throw wilty lettuce away, I just put it in my stir fries. The veggies and tofu were cooked in a tiny bit of canola oil with garlic salt, and some chili pepper flakes and turmeric were added for flavor.

At first I just decided to make a vegetable bake since I had an eggplant, a couple of tomatoes, some carrots, an onion, and a bunch of cilantro I wanted to use up. I chopped up all of these ingredients, and tossed these with a tiny bit of olive oil and garlic salt. The vegetables steamed in the oven at 400F for about an hour, and started smelling like stuffing about half way through. It was a pleasant surprise for veganuary that I made a dish that smelled and tasted like stuffing. I have been a vegan for a couple of years, but veganuary is a fun way to try a plant based diet for the first time. Just check out all the fun recipes people are posting online.
